Filet Mignon Heating Instructions
Recommended preparation: Preheat oven to 400ºF. In a medium ovenproof pot or dutch oven add ½ cup water, vegetable broth or beef broth (we recommend vegan beef broth, of course). Place steaks in the pot, cover and bake for 30 minutes until filet is heated thoroughly. Drain broth, then wrap bacon around the steaks (you may need to hold them in place with toothpicks) and bake for another 10 minutes.
Alternate preparation: Preheat oven to 400ºF. Place filet mignon in the center of a large sheet of aluminum foil and fold, creating a pouch. Bake for 20 minutes, wrap with bacon, then bake for an additional 10 minutes until heated thoroughly.
Once prepared either way, add the butter on top.
Roasted Brussels Sprouts with Pecans and Bacon
2 lbs Brussels Sprouts
2 Tbsp Vegetable Oil (such as Sunflower or Canola)
6-8 oz. Vegan Bacon
1 tsp Kosher or Sea Salt
2 Cups Raw Pecans.
Preheat oven to 400º F. Clean brussels sprouts and cut in half lengthwise. Roughly chop bacon and set aside. Place pecans on an ungreased baking sheet and toast for 5-10 minutes until lightly browned and fragrant.
Working in batches if necessary, heat a large sauté pan with vegetable oil over medium-high heat until oil shimmers in the pan. Add brussels sprouts and reposition so that the flat side of each sprout is in contact with the pan. Slide pan back and forth to prevent sticking. Cook for about 5-10 minutes until sprouts are dark brown. Add bacon to brussels sprouts and stirring occasionally, continue to cook until bacon is lightly browned. Remove from heat and add pecans (along with previous batches of brussels sprouts if necessary). Season with salt. Serve hot. Serves approximately 2-4 people.
