Our History

Meet the Vegan Butchers

Like all great inventions, Herbivorous Butcher was borne from passionate curiosity. It started with Sister Butcher® Aubry creating meat-free alternatives of Guamanian classics from childhood. Though she wouldn’t eat animals anymore, she still craved the meaty, flavorful sensations that pervades Guamanian cuisine. That’s when she realized: humans become vegan for their health and the health of the planet — not because meat and dairy taste bad.

After convincing Brother Butcher® Kale to hop on the vegan bandwagon, a culinary collaboration was set in motion. Marrying bold flavors with molecular gastronomy, Kale’s keen sense for ingredients helps deliver the deeply umami, flavorful, savory, nutritious creations we know and love today.

Our beginnings

Starting Herbivorous Butcher

Not all “A-Ha” moments happen over the dinner table; but creating Herbivorous Butcher sure was. When Aubry suggested “LET’S OPEN A VEGAN BUTCHER SHOP,” laughter turned into realization that a brilliant idea was just getting started.

It wasn’t until 2014 that Aubry and Kale brought their meatless wonders to the Minneapolis Farmers Market, selling only five products — and attracting a lot of attention. Their loyal fanbase quickly grew, and the Siblings Butcher® opened their first brick and mortar, The Herbivorous Butcher, in 2016.

As the first vegan butcher shop in the nation, The Herbivorous Butcher wears its oxymoronic badge with honor. Built on the notion of good food that’s good for you, they continue to think outside of the box to deliver vegan alternatives unlike anything else on the market.

Environmental call to action

The need for meat alternatives has never been greater. Global demand for meat has tripled in the last 40 years, causing dramatic and unsustainable increases in greenhouse gas emissions, deforestation, and water pollution, intensifying pressures on land, water, fertilizer, feed, and fuel.

A modest reduction in the consumption of animal products would spare billions of animals from inhumane treatment every year and reduce greenhouse gas emissions to avert catastrophic climate change.

That’s why The Herbivorous Butcher brings you small-batch, plant-based meats that are always fresh, flavorful, and protein-rich — so you never feel like you’re sacrificing anything for healthy and ethical eating. Because we can all change the world one meal at a time!

For the planet

To put it plainly: animal agriculture wreaks havoc on local environments, requiring land clearing, increased water usage, and fertilizers that damage ecosystems. Vegan diets help promote more sustainable farming and limit greenhouse gas emissions that expedite climate change.

For the animals

Not only does animal agriculture damage the planet, it causes undo suffering to the animals being slaughtered. Even seemingly innocent byproducts like eggs and milk are produced through inhumane conditions. Vegan diets let animals be animals — not food.
